May I start by saying these are gluten free, dairy free, refined sugar free and packed full of fiber (so basically awesome)
These pancakes contain banana, coconut flour, eggs & cinnamon.
So easy and so yummy!
Recipe / Method
Mash 2 Ripe Bananas until Smooth.
Add in 3 Tablespoons of coconut flour
Add 3 eggs
Add around 1 Teaspoon of cinnamon
Mix until all ingredients are well combined, the coconut flour can be grainy so make sure you mix very well!
Make sure you cook these beauties on a medium heat pan with coconut oil and you shall have the most wonderful pancakes! Add whatever takes your fancy to enhance the flavour. I added a blueberry sauce & put golden kiwi fruit on the side. However I think sliced or roughly chopped almonds, sliced banana and a almond butter sauce would be to die for! Nom!
